Balsamic strawberries with whipped mascarpone cheese
Ingredients
* 15-20 fresh strawberries, hulled and quartered
* 1 tsp (or more) of sugar
* 1/3 cup balsamic vinegar
* 2 tsp sugar
* 1 tsp fresh lemon juice
* 2-3 Tbsp mascarpone cheese
* 2 tsp sugar
* 1 tsp vanilla essence
Preparation
In a bowl, gently toss the strawberries with the sugar. Leave for 15 minutes.
Mix the balsamic vinegar, sugar and lemon juice in a small saucepan. Stir over medium heat until sugar dissolves and the vinegar is reduced to a syrup-like consistency. Cool.
Whip together the mascarpone cheese, sugar and vanilla essence.
Portion the strawberries with their juices, mixed with a bit of balsamic syrup into serving bowls. Top with the mascarpone mixture and drizzle with the remaining balsamic syrup.
Citrus Salad
Ingredients
* 1 orange, peeled and segmented, with all pith removed and reserving any juices
* 1 pink grapefruit, peeled and segmented, with all pith removed and reserving any juices
* 1 fennel bulb, sliced
* 1 tsp coriander seeds
* 1 tsp cumin seeds

Preparation
1. Add the segments and juice of the orange and grapefruit to a bowl.
2. Add the fennel to the fruit and mix together and set aside.
3. Dry-fry the coriander and cumin seeds to release their aromas and crush to a coarse powder in a pestle and mortar or food processor.
4. Mix the crushed seeds into the salad.
